Oak plate KU-001: fixing the product, size, and cost

The product card shows four versions of KU-001 made of oak. The variant table uses size A × C, and the finish name is "Prestige Transparent." For our scenario, we select 220 × 22 mm and do not replace it with a smaller or larger item.[1]

It is especially easy to make a mistake during a quick glance: the large price on the page may refer to the default selected variant of 170 mm. The product cost of thirty KU-001 220 mm at the specified price is 30 × 1,270 = 38,100 ₽. The amount does not include delivery, organization of additional processes, consumables, or staff labor. The number 22 mm should not be used as a ready-made depth for calculating the portion volume. The product size range and useful capacity are different data. Why a gentle program is not an exception

The card does not specify an allowed machine wash temperature, short cycle duration, or a list of permitted programs. It does not follow that you should independently select the mildest combination. Such a selection would be a new instruction that the manufacturer did not provide.

Disabled drying, the top rack, partial loading, or a separate run without other dishes do not solve the issue. These changes still leave KU-001 inside the machine. Testing on a single unit also does not turn prohibited use into permitted use: an externally successful result of one cycle does not confirm durability, let alone the sanitary suitability of the method.

For the purchaser, it is useful to distinguish two situations. The first: a specific restriction has officially changed, and a new effective instruction has been received specifically for the purchased version. The second: an employee decided to try a method not present in the documentation. The basis for reconsidering a decision can be the first situation, but not the second.

A separate risk is the transition between shifts. During the day, the barista remembers manual care, but in the evening another employee collects all the dishes into racks. Therefore, even a theoretically suitable process must be checked for the handover of duties. From September 1, 2026, SanPiN 2.3/2.4.4282-26, approved by Resolution No. 18 of the Chief State Sanitary Doctor of the Russian Federation dated June 2, 2026, applies. Before paying for the batch, the person responsible for food safety must assess applicable requirements, product documents, and the actual process of the establishment. When questions remain about the admissibility of a specific scheme, they should be resolved with a specialized specialist and, if necessary, obtain clarification from the competent authority. A seller's letter about wood preservation does not replace such an assessment.

Two different answers need to be obtained. The manufacturer answers what impacts the product can withstand. The establishment determines whether mandatory treatment can be performed under its conditions with these limitations. A positive answer to only one question does not close the second. For example, a surface may withstand a certain agent well, but this does not yet confirm the suitability of the mode itself for the assigned sanitary task.

Further calculations of manual service in this article are needed for a preliminary assessment of the purchase, and are not an approved sanitary instruction. They apply to the working project only after resolving the question of admissibility of use. If this question is not resolved, the calculation result "we have enough forty plates and one employee" does not make the purchase justified.

Buying wooden plates for food: first describe the product's route

For a preliminary assessment, a scheme is sufficient: return → designated waiting without soaking → treatment according to an agreed procedure → drying → inspection → clean storage → issuance. This is an organizational model. Specific agents, equipment, and sanitary modes are determined not by arrows on the scheme, but by the documents discussed above.

Each transition must have an executor. If a waiter receives returned dishes, but treatment is assigned to a dishwasher, it is necessary to understand how they pass them to each other. If the same employee inspects the dried surface, this work must also be taken into account, rather than ending the timekeeping at the moment the water is turned off.

Restoration of protection is suggested to be done with Rubio Monocoat oil.[1] This information describes gentle handling of the product. You cannot arbitrarily add water temperature, soaking duration, or concentration of restaurant chemicals on your own.

In the service project, one should distinguish between removing dirt, necessary sanitary treatment, and returning the plate to a state suitable for storage. A visually clean surface does not confirm the completion of the other tasks. That is why laundry soap from the factory memo should not be declared a ready replacement for the entire cafe regulation.

Why wiping should be considered a separate operation

In the work schedule, often only the washing itself is taken into account. But after it, the employee must still process both sides of the item, perform the prescribed drying, check the surface, and place the plate in the correct zone. If this work is not included in the calculation, it will still appear during the shift — at the expense of delaying another task.

The manufacturer's recommendation about a towel also does not mean that one shared damp cloth is allowed for all surfaces and the entire shift. The organization of textiles, their replacement, and the acceptability of a specific drying method must be determined by the establishment's sanitary regulations. The factory instruction does not describe this area with sufficient detail for food service.

For timekeeping, record two times. The first is the employee's active work with the plate. The second is the full time from return to readiness for serving. They are needed for different calculations: the first determines labor costs, the second determines how many items will be simultaneously unavailable to guests.

A universal time frame of "dries in five minutes" should not be set. It is not confirmed for KU-001 and does not account for the actual organization of the process. During a preliminary test, the actual time and conditions are recorded. But the sufficiency of drying, like the acceptability of the entire treatment, is not established solely by a stopwatch or by feeling dryness with the palm.

Clean storage completes the route. Returning a dried plate to a place where untreated items previously lay, just to save shelf space, is an organizational mistake. For the buyer, this means the need to count not only the dishes but also the suitable spaces at each stage.

Why you can't pile up dirty plates until the end of the shift

Let's imagine there is no separate dishwasher. After lunch, an employee stacks oak dishes in the sink and plans to deal with them later. If there is water in the sink, prolonged contact occurs, which the manufacturer warns against.[1] If there is no water, only one problem disappears: the queue of unprocessed dishes still grows.

Don't replace this situation with advice to soak a plate in water "just briefly." The card does not define a safe soaking limit. For process design, it is more useful to eliminate the dependence on accumulation in a filled container than to try to pick a convenient number of minutes without justification.

Dry dedicated waiting is also not permission to store used dishes indefinitely. Here, the cafe must define the procedure for return and processing in its own regulations. Our task in assessing the purchase is to see whether there is enough staff and space, not to invent a new sanitary waiting time.

What changes during peak hours

Returns rarely coincide with an even distribution of workload. Several tables finish breakfast at the same time, and a group of items arrives at the sink. At that moment, the employee may be processing other dishes, changing consumables, or cleaning. The average number of orders per day hides such a conflict.

A conditional calculation shows the problem. If eight KU-001 items are returned every fifteen minutes, and the agreed process completes processing six during that time, the queue grows by two plates. Over four identical intervals, eight will accumulate. This is not a forecast for a specific cafe, but an example of why daily throughput does not guarantee peak performance.

Buying ten more plates will allow new portions to be served for a while, but will not eliminate the processing backlog. If the queue grows longer than the reserve lasts, the establishment will face the same shortage later. Therefore, first check the process capacity, then determine the working quantity of dishes.

Why thirty seats do not mean thirty plates

The number of seats describes the dining area. The working inventory of dishes describes items simultaneously in use: with guests, at the pickup point, in return, in processing, and after it. There is no constant coefficient between these quantities.

A cafe with thirty seats may have twenty people seated at one moment, but the previous ten plates have not yet returned to the ready stock. Another scenario is possible: KU-001 is used only for one dish ordered by eight guests. The same hall capacity in these cases yields completely different needs.

Preliminary and working formulas

For a first approximation, a model can be used:

It helps to see the components of the batch, but the average value can hide the most intense moment. For a final decision, it is more useful to track simultaneous occupancy over several characteristic intervals:

Here, S — plates at guests and on the order being assembled; Q — returned, awaiting processing; W — in processing; D — not yet ready for storage after processing; R — separate operational reserve. The maximum is taken over observed moments, not by summing independent maxima of different hours.

This is a proprietary calculation model for purchasing, not a manufacturer standard. Its accuracy depends on how well observations match the future menu, workload, and adopted process. When conditions change, the number is recalculated.

How not to count one plate twice

At the moment of observation, each item must belong to only one state. A plate that has already started being washed is no longer in queue Q. A dried and approved-for-issue item does not remain in D. Reserve items are not added again as "being in the cabinet."

If several plates are removed for coating restoration, a method of accounting must be chosen in advance. Either they are covered by the established reserve, or they are added as a separate line of unavailable items. Applying both options simultaneously will overstate the requirement.

For the original thirty KU-001 items, there is a simple verification question: what happens if all thirty are with guests? The next serving is possible only after return and full completion of processing of at least some items. If the menu implies a second serving before that moment, the batch is insufficient even without damage and coating maintenance.

Drying and storage: where the calculated batch will be placed

After calculating forty plates, one cannot limit oneself to the phrase "a cabinet will be found." Different places are needed along the route: for waiting, processing, finishing, and clean stock. The same square meter should not be simultaneously promised to all stages.

Suppose that in a conditional peak snapshot, five items are in processing. This does not yet mean that five free positions are sufficient. If an employee completes work in groups, a new group may arrive before the previous one is freed. The size of the area must be checked against actual organization, not just the average number of plates.

Practical verification begins with templates of 220 mm diameter or with a sample. They are laid out on the intended surface, and space for hands, tools, and safe transfer is marked. Such an exercise shows physical capacity but does not establish the sanitary acceptability of the chosen surface: that is assessed separately.

Why the stack height cannot be calculated as 22 mm per item

The number 22 mm refers to the dimension of an individual KU-001. Without measurement, it cannot be claimed that ten plates will take up exactly 220 mm in height: when stacked, items may partially fit into each other or rest on certain sections of the profile. The actual height depends on the contact geometry.

Therefore, to store a batch, measure an actual stack of acceptable height, check stability and ease of removal. The ability to compactly stack plates is not permission to stack them while under-dried. These issues need to be addressed separately.

First, determine the maximum number of finished items that need to be kept near the dispensing point. The remaining stock does not have to be placed in the tightest area if it can be brought over without delay. But a reserve that is inaccessible to the employee at the moment of work does not help service: for example, a box in a locked room, the key to which is held by an absent administrator.

For the coating service area, a separate solution is required. Items in progress, after restoration, and in finished stock must be distinguishable. A label with the processing date and status is more useful than a verbal message "don't take these yet." It reduces the likelihood of returning a plate to service before the time specified by the instructions.

Cost of wooden plates for a cafe: calculating the entire process

The amount on the card answers the question of how much the product costs. The manager needs a different metric: what will its use cost given the chosen menu and workload. After confirming the process is acceptable, several purchasing scenarios can be compared without mixing one-time and recurring expenses.

One-time costs include a sample, a working batch, delivery, and necessary changes to the organization of the area. Recurring ones include active labor, consumables, surface maintenance, and replacement of retired items. Costs for existing equipment should be accounted for so that they are not attributed to the new plate again.

Example of labor calculation without a made-up washing standard

Suppose in a conditional shift there are 120 cycles of KU-001. According to the time study of the adopted process, one cycle takes 75 seconds of active work, and for internal calculation, the cafe assumes an hourly labor cost of 400 ₽. These are specially chosen input data, not a manufacturer's standard or a statement about market wages.

Then:

120 × 75 ÷ 3,600 = 2.5 hours of active work per shift.

2.5 × 400 = 1,000 ₽ of estimated labor costs.

Passive waiting should not be automatically added to an employee's working time. But it remains in the full cycle and affects the amount of unavailable dishware. The reverse mistake is not accounting for work because it is performed by an already hired person. Even without increasing the payroll fund, it takes up part of their shift and may take time away from another operation.

When comparing with the previous dishware, the additional, not necessarily all new, labor intensity should be calculated. If the old process also required sorting, loading, unloading, and control, the corresponding operations already existed. Compare equal service volumes, not manual work against a conditional zero.

However, the purpose of the sample must be formulated in advance: it is needed to check the portion, handling, and documents, not to find a way to bypass the machine's restriction.

Until the sanitary issue is resolved, the test is conducted as an internal technical assessment, without using an unverified scheme for serving guests. The very fact of purchasing a sample does not mean that the product is already approved for the cafe's working circulation.

For the check, exactly this is suitable oak plate KU-001 of the selected size and execution. A sample of another model will not confirm the ease of carrying, the shape of the rim, or the placement of the portion on the 220 mm variant. A photo of a similar plate will certainly not replace a trial.

What to check during a model work shift

First, assemble the actual portion that the kitchen plans to serve. Check the placement of the side dish, main product, sauce, and utensils. Assess whether the plate can be placed on the tray in use without changing the usual grip. Record which actions will require retraining for the staff.

Then conduct several permitted handling cycles with realistic soiling for the chosen dish. Do not select only the lightest option if the menu will be different in the future. But do not assign a test with aggressive chemicals or machine washing: such impacts do not become permissible for the sake of testing.

Record the time of return, start of processing, completion of active work, and readiness for placement in the clean stock. Rubio Monocoat oil: coating maintenance is included in the budget

Factory coating KU-001 is colorless Rubio Monocoat oil; the card provides for the possibility of its restoration.[1] For a cafe, this means an additional maintained procurement item. You cannot include only washing in the project and leave the surface condition issue to an employee "when they notice it."

Maintenance frequency should not be assigned by a calendar from a general article about wooden tableware. For KU-001 in the card under consideration, there is no single interval suitable for any cafe. Manufacturer recommendations for the chosen application and observations of actual condition are needed, not a promise of treatment once a quarter or once a year.

When accepting a sample, it is useful to save photographs of its surface. Then the condition can be compared without relying on memory. But not every trace of use automatically means it is time to apply oil: the cause of the change, the acceptability of further use, and the restoration technique must be determined before the item is returned to service.

Which oil to buy and what to clarify in the kit composition

Among related products, there is Rubio Monocoat Oil Plus 2C, component A, Pure. STAVROS indicates the possibility of its use for finishing wooden tableware.[3] However, the name of the two-component system does not mean that both components are already present in the specific package being sold.

Before buy oil for wooden tableware, request the exact name of the material for restoring specifically the factory coating KU-001. The response must include the delivery contents, necessary preparation, the need for a second component, the application procedure, and the conditions for returning the item to food contact.

Rubio Monocoat has Food Contact Compliance confirmation for Oil Plus 2C and the systems listed by the manufacturer.[4] This is a useful document, but it cannot be applied to any product with the word "oil" in its name, to an arbitrary mixture, or to a different mode of use. It is necessary to establish which product and application method the confirmation refers to.

Arbitrary replacement with furniture varnish, leftover floor oil, or a compound without documentation is not equivalent restoration. Even a similar trade name does not answer questions about compatibility with the old coating and permitted use. Saving on a small consumable does not justify uncertainty for the entire batch.

Why a plate cannot be automatically returned for the next breakfast

The official Rubio Monocoat instructions for the described Oil Plus 2C technology with components A and B specify drying in 12–24 hours and waiting at least five days before cleaning with water.[5] This illustrates the difference between initial drying and readiness for subsequent exposure. It is not a universal instruction for restoring KU-001 using only component A.

For cafe dishes, a confirmed period of approval for their specific use after the chosen treatment is required. It cannot be replaced by the feeling that "the surface is no longer sticky" or by assuming that a short pause between evening cleaning and morning opening is inherently sufficient.

This leads to a practical requirement for the reserve: serviced items are temporarily unavailable. If the entire batch is treated simultaneously, there may be no clean working stock left. The restoration schedule should be coordinated with the amount of available dishes and the possibility of temporarily using another approved solution.

The instructions for handling oil-soaked rags are followed separately: the manufacturer warns about the possibility of spontaneous combustion of oil-impregnated materials.[5] This is a matter of organizing the service area, not a reason to store used rags together with plates or kitchen consumables.

Additional disinfection: what permission for food-grade ethyl alcohol means

The KU-001 card allows additional wiping with alcohol-containing solutions based on food-grade ethyl alcohol.[1] The wording is narrow: it does not automatically extend to any restaurant disinfectant and does not describe a full sanitation procedure.

It does not specify the concentration, contact time, spectrum of action, solution preparation rules, or the need for subsequent operations for a specific product. Therefore, it cannot be used to create a working instruction like "wipe with any alcohol and serve the dish immediately." The word "additional" also does not allow excluding other mandatory steps.

For procurement, there are two separate items to check. The first is whether the manufacturer of the product allows exposure to a specific composition. The second is whether the product itself and the mode prescribed for it are suitable for the dishes and the conditions of the establishment. An answer to one of these questions does not replace the other.

For example, the presence of ethyl alcohol in the composition does not yet describe the other components of the product. A familiar concentrate may require dilution, dwell time, or a different order of application. Conversely, the statement "the wood withstood the treatment" says nothing about the sufficiency of disinfection.

You should not independently prescribe chlorine-containing compositions, technical alcohol, strong cleaners, or abrasives. For some of these effects, a direct restriction on the product card already applies; for the rest, documentary confirmation of compatibility is required. The absence of noticeable damage after a single application does not replace such confirmation.

A practical request to the supplier should include the name of the intended product and its instructions, not just the question "can I use alcohol?". But even a detailed response from the supplier is evaluated together with sanitary requirements. The manufacturer of the plate does not establish exceptions to public catering rules.

If it is not possible to combine the necessary treatment with the restrictions of KU-001, the reason for rejecting the batch is already sufficient. There is no need to move on to finding a compromise concentration or reduced dwell time to preserve the chosen design. Such a compromise is not confirmed either by the product card or by the completed procurement calculation.

Hot serving and a heat lamp are different conditions

The manufacturer describes KU-001 as tableware for cold and hot dishes, but at the same time prohibits prolonged heating.[1] Therefore, permission to serve a ready dish cannot be read as permission to cook in the plate, heat it for a long time, or use any hot line equipment.

For a cafe, this difference becomes apparent even before the guest arrives. A portion may be assembled in advance and placed under a heat lamp, left in a heated display case, or the plate may be used as a permanent part of the serving area.
